hmm 10...ok in no particular order:
Fullmetal Alchemist (Brotherhood too)

Hellsing
Last Exile
Saint Seiya
I can't decide on the last 4, although to be fair plenty of good anime like Trigun, Evangelion, Elfen Lied, Gundam Wing, Hunter With Robin, Blood+, and possibly more.

No mentions of One Piece? That has got to be my top. 650 episodes in and it feels like its just getting started. They havent even scratched the surface of the storylines that are to be told and animated.
