Can anyone illuminate why they tout “original theatrical audio mix”?
Was there an issue with the audio mix when it came to Blu ray ?
Were the audio mixes on the previous blu rays deemed subpar?
(i don’t remember mine ever having any issues, so.... (n) )

I don't really know tbh, Interstellar also had that on the back. Maybe they just mean that the DTS-HDMA 5.1 that is in the disc is what you heard back in cinemas? Probably

That doesn't matter practically talking, because if it will have an Atmos mix theatrically then automatically the 4k disc will have it.
well not really, there are 2 movies: The Revenant and Dawn of the Planet of the Apes featured Dolby Atmos in theater but not on 4K UHD discs...
