I've never bought a digibook, but I'm wondering is Star Wars collection considered a digibook or just a different packaging all together?
Not sure exactly which one you are talking about, but I think the one you are referring to is the digipack one. It's called that since there's no pages with text to read (digibook). :)

If it has got pages where the discs slot into the side like Indiana Jones or Men in black trilogy then we class that as a digibook. So yes I would class Star Wars as a digibook.:)
 
Ok, now I'm confused lol, so they would be digibooks? And Digipaks would be the cardboard shells with plastic hubs inside?

Anything with a book style packaging with pages is usually classed as digibooks. A digipack is something that opens out to reveal artwork or discs. Here's an example of a digipack,
