I was just ordering this on amazon jp and i noticed you could add gift option and ask them to remove pricing, would this be a) legal and b) a way of not paying customs and charges?
No, they still have to declare a value on the customs slip. If you want to avoid customs charges, you need to use a re-shipping service.
I think the easiest thing is just order with a few steelz to use the expensive shipping fee and pay the customs lol

2628 yen + 3000 yen shipping = 5628 yen = £45 x 1.2 (Customs) = £54 + £1.25 DHL courier fee = £55.25.

I actually plan on ordering this via amazon.jp tonight but is this customs charge apply to every single order that has processed to the USA from amazon.jp? Now I'm worried if I order I'll get a dreaded phone call saying I owe more money.....
^ i have ordered twice from amazon.jp both times over $200 and I have never had to pay any customs fees. I am pretty sure you will be fine.

DHL have rang me twice today. Waiting on this, narnia and battle los Angeles and it looks like amazon.jp have sent these three steels in two packages....why?

When did you order Narnia? If you ordered within the last week you probably did not buy from amazon directly but a 2nd party vendor on amazon which might be the reason its two seperate packages.
That might well be possible but I checked my amazon.co.jp account and it says they have all been purchased by 販売： Amazon.com Int'l Sales, Inc.
Yeah amazon does the transaction and the other company ships from its location. If you look on amazon.jp its says sold by ?????? And fulfilled by Amazon.
