I'm in the same position as you, I've ordered the steelbook but haven't seen the original trilogy.

Read the books first, then see the "short" trilogy, individual films then the Extended Versions if you want, then see new version. Alternatively just go straight into new version if you don't want to be making comparisons. The extended versions were made for TV and certainly the UK versions are 6 episodes. A lot of time has been added but not a great deal of substance, however that's not really the topic here.
