What do ya'll prefer to drink? Beer, Wine, Hard Liquor, Wine Coolers? All of them?

I only drink Beer and Hard Liquor. Mint Mojito is about the only thing close to a wine cooler I'll drink though LOL

Looks tasty alpha. I'd probably use a few more IBU's for bittering hops, but I'm a hophead so that may be just fine :D

I made an Oktoberfest last weekend. My first lager. It is going very well actually, and using the swamp cooler for temp control is easier than I expected. I opened the closet yesterday and got a big, sulphury smack in the face. I guess I'm on the right track! I had always heard that lagers made more sulphur compounds as they fermented, but this was intense! I almost started searching for a stow-away who had been eating bean burritos all night....

According to my calculations this should come out to about 32 IBU's... last time I checked isnt' that the rough range that Sierra Nevada's Pale Ale is in? That's where I'm heading for my Pale Ale.

mmmmmmmmmm I like a good oktoberfest... october is comin' around... and it looks like Ichabod Crane's Pumpkin Killer is back on the list for a Halloween brew session the family drank that shite up!
 
i got an IPA ready to bottle this week. I hopped the **** out of hit so it should be good. I know it smells fantastic
 
yeah im pretty excited. I think i am gonna get a little crazy on the next batch and try bourbon aged RIS. But we will see.

Just make sure you remove the tap and then you're good :oohyeah:
 
What's the best way to store beer while letting it age. I've got some KBS and just picked up some Nemesis :scat:, and I'd like to try and age a bottle from each.

I also found out that I shop at the 8th largest liquor store in the US.
 
A cool, dark place. Basement closet works nice. Usually 50F-55F is a good temp for big beers. Its just hard to keep it that cool all the time. I got mine right around 60-65 now. I want to by a cooler like they use in wine cellars but that is expensive. maybe around tax season.
If you dont have a lot of beer you are trying to age you could by a small wine cellar. Just take enough shelves out of it so you can stand you beer up straight. You plug that in down in a basement and you can get it to the right temp.

You could also just buy one of those window air conditioners and just let it run in the closet.. it'll cool it down. Depending on the model it should be fairly easy to override the internal thermostat.


Ahhh beer cellars. Mine right now is a big rubbermaid box :D



Brewed my orange pale ale yesterday.

6lbs DME
1lbs Crystal 120 for steeping
2oz Cascade @ 60 min
1oz Cascade @ 15
1oz Sweet Orange Peel @ 15
Dash of coriander @ 15

The pre-ferm sample was fargin beautiful. A sting of hops on the tongue with a nice orange bitterness, second sip revealed a very smooth flavor... can't wait to see what the yeast does. I used American Ale II from wyeast, man that yeast smells spicy!
 
You've got me craving a beer at 8:25 in the morning!

I've only got two bottles I want to store and age at the moment, the KBS and the Nemesis. I was really shocked to see Nemesis sitting back in the Founders area. They've got three 4-packs left after I picked up mine. Do they always put a label on the bottle that's different than the box? I was a little surprised when I looked at the bottle label (blue) and then the box (tan like Splax's old avatar pic). Looking forward to trying it. :scat:
 
Mmmm, that sounds wonderful alpha. I've used orange peel and coriander before, but it was for a belgian, not a pale. I bet its still pretty good though! I've used the american ale several times too, it smells spicy at first but it will finish pretty clean. Dry yeasts used to get a bad rep, but I've started using US-05 for my pales and IPA's and that stuff is incredible, plus its 1/3 the price of liquid yeast! No starter needed either, plus it compacts well and the finish is nice and clean. Hard to beat that!
